Camellia sinensis is an evergreen shrub or small tree that has small, glossy leaves and fragrant white flowers that are produced in the fall.
The young, light green leaves are harvested for tea production. Harvesting of the tea plant can occur several times throughout the more vigorous growing period of spring to summer, and this gives plenty of opportunities to try different methods of creating your preferred tea. The same plant, Camellia sinensis, gives rise to several different teas: Green Tea, Oolong Tea, and Black Tea. The difference between them is down to the processes the leaves undergo once harvested.

Chocolate, originally found in South America, is known as “The Food of the Gods.” The first record of chocolate or cocoa dates back to 1900 BC, and the Aztec people used chocolate seeds as a form of currency. Cacao trees have large dark green leaves that shade the fruit pods which grow directly from the trunk and large branches. The flesh is eaten as a dessert, and the seeds are the raw material for commercial chocolate. Hot chocolate can be made by drying the seeds, roasting, grinding, and adding milk. Cacao trees are iconic of the tropics, and they are well suited for container growing.

Lichens do no damage to tress and should not be removed. But they should be removed from garden statues or sculptures because they can penetrate and damage the stone. Scraping does not remove the entire thallus, so use sprays containing copper salts to control lichen growth.
