Cremont, or, the "Cream of Vermont," is a double-creme mixed milk cheese made with cow and goat milk with a touch of creme fraiche. This is a true American classic and a celebration of Vermont Creamery's terroir. A unique cocktail of yeast and mold is added to create its distinctive flavor and to coagulate the milk overnight. It is then shaped by hand and aged for just two weeks where it develops a luxurious texture and flavor. Serve with pancetta, fig jam, fruit and nut crisps, hazelnut thins, and pickled cherries. Pair with Riesling or Amber Cider.

Grayson comes to us from Meadow Creek Dairy, a family farm located in the mountains of southwest Virginia. Cheese production is done seasonally, with the milking beginning in March as the calves are being born and the fresh spring grass begins to come in. The cows are never confined and are born and raised in pasture. As grass growth declines in the fall, milk production naturally falls as well, and Christmas Eve is the last day of the milking season, kicking off a two-month long rest for both the family and the cows. 
Based on a Taleggio recipe, Grayson is a classic example of a washed rind cheese. This is an intense cheese both in aroma and flavor. Earthy and pungent, with notes of beef, bacon, smoke, grass, and butter, this cheese isn't for the faint of heart. But if you're brave enough to try it, you may just discover a new favorite. Serve with bread and dried fruit. It pairs best with beers and malty brown ales. For a wine pairing, try a full-bodied white or medium red.

Rogue Creamery Smokey Blue Cheese is the world's first smoked blue cheese! It is signature to the state of Oregon, as it gets it's special smoky flavor from being gently cold-smoked over the shells of Oregon hazelnuts. This process gives the cheese an extra depth of rich flavor reminiscent of candied bacon. Smokey Blue can be used to elevate simpler foods like burgers and deviled eggs to new heights, or can be served on a cheese board with nut brittle and roasted or preserved fall fruits. Pair with big reds like Cabernet Franc or Zinfandel, or whites with depth and sweetness like Sauternes. For a more adventurous pairing try an American Whiskey or Bourbon.
