Brebisrousse d'Argental is luscious and silky enough for brie-lovers, sheepy and full-flavored enough for the most adventurous palate. Its bright orange rind refuses to be ignored, but its delicate sweetness balances the buttery intensity with aplomb. Made in Lyon, France, of pure pasteurized sheep milk—richer and creamier than cow’s milk—Brebisrousse (literally: red sheep) is everything we could want in a cheese. Serve with Medjool dates, Saucisson Sec, and quince paste. Pair with Pinot Noir, ciders, and farmhouse ales.

Tête de Moine translates to "monk's head"- who says monks don't have a sense of humor?
Eight centuries ago Swiss monks in the Jura Mountains used cheese made in their abbey to pay annual rent on various properties. Time and again documents from subsequent centuries mention the use of the valuable cheese as a form of payment. The oldest description found is from the 1600's and describes the milk used for Tete de Moine as "a very fatty milk of impeccable quality from the best grasses and herbs of the country," and since this cheese is a certified protected designation of origin product, you can be assured that not much has changed! 
The traditional way monks served this cheese was to shave very thin rosettes with a knife; but in 1982 the girolle, also called a cheese curler, was invented and that was when Tete de Moine saw a big boost in interest and consumption! Shaving allows the full aroma and flavor to be released, and it's truly the way this cheese was meant to be served. With Tete de Moine's extensive history, the unique way of serving, and it's silky, melt-in-your-mouth flavor, this is a cheese you will want to serve to guests year round. Serve it with fresh or dried fruits (grapes, figs, apricots), nuts, and honey. Sometimes it is eaten with pepper and cumin! Try adding some rosettes to a salad or sandwich, on crostini or other appetizers. It pairs well with a variety of drinks, but red or hearty dessert wines are usually recommended.
