Appenzeller has been mentioned in documents over 700 years old, and was once even used as currency! It continues to thrive today as one of Switzerland's favorite cheeses with over 70 dairies producing it. There are three different ages in which the cheese is released: Classic (3-4 months), Surchoix (4-6 months), and the one we will be sampling, Extra (6+ months). Spicy and flowery, this Black Label cheese is initially soaked in brine. As it ages, the rind is rubbed with a mixture that may contain up to 20 ingredients including wine, cider, yeast, herbs, spices, and salts; each affineur may have his own concoction. This cheese can be very strong, but it is excellent when used in recipes like fondue, sandwiches, and omelets. Serve on a cheese board with summer fruits, and pair with Riesling.

Fontina is a classic Italian cheese that has been made in the Aosta Valley since the 12th century. There are several different versions made in countries including France, Denmark, Sweden, and the US. But it is the original DOP (Protected Designation of Origin) certified Fontina Val D'Aosta that is the most famous, and most flavorful; the other versions are noticeably milder. Made from the milk of Valdaostan Red Spotted cows grazing on the plains of Aosta Valley, the result is a firm but creamy cheese with unique rich and nutty flavor that is perfect for melting. Use in fondue or risotto, or serve as a table cheese with nuts, fruit, and charcuterie. It pairs well with Chardonnay, Nebbiolo, Barbaresco, an Alpine white like Viognier, or a bold Piemonte red.

Carr Valley's Sweet Vanilla Cardona is a unique sweet vanilla goat milk cheese with hints of caramel, coconut, and nutmeg! It comes to us from Wisconsin's Carr Valley Cheese Company, where they source their goat's milk from a group of just eight farms in the Green Bay area. It has won multiple awards, including First Place at the 2016 World Championship Cheese Contest, and Third Place at both the 2012 World Cheese Awards, and the 2011 American Cheese Society. Serve it with chocolate, strawberry jam, fruit and nut biscotti, or try it in stuffed French toast, or a sweet grilled cheese with chocolate and spiced nuts! It pairs well with ice wines, Shiraz, and Pinot Noir.
